    Hi Guys,
    Thanks to my fellow Texan and true Chambers buddy Lori G, I will be cooking with an on- loan Lisk roaster.

    NOW, What I need are some suggestions for recipes for BIG EATERS. my sister hubby, and 2 growing big kids are coming.

    I was thinking of beef or chicken
    spaghetti,

    Roast
    Thats 2 nights, I need more ideas,times, CWTGO,amounts,
    and any other suggestions.
    I can do griddle pan cakes (for the first time) and naturally, Oatmeal but in the big kettle this time. So Berlyn what amounts did you fix for the neighborhood.? I just have the triplets and the kettle...v

    I wish that I could help, but as you will see from the condition of the roaster, I haven't used it yet. I would love to get some great ideas because my family is already planning Thanksgiving and Christmas at my place. Let me know how it goes wit your family.

    It was wonderful to put a voice with a name, and I look forward to seeing you and your kitchen in the near future.

    You need the Cookbook and the Menu's of the Month recipe book - they give all kinds of great recipes and ideas for cooking with the gas turned off.

    There are recipes for meatloaf, tamale pie, turkey, etc. Some of those could help.

    Here are some other ideas from crockpot receipes. I haven't tried them, but they are ideas.

    "Colorful" Chicken And Rice

    1 cup uncooked rice
    2 boneless chicken breasts
    1 can cream of chicken soup
    1 can cream of mushroom soup
    2 cans water (or white wine or sherry)
    1 package dry onion soup mix
    1/2 teaspoon paprika
    Any or all of the following:
    1 large carrot -- sliced into pennies
    1 cup cut-up fresh green beans
    1 medium green pepper -- chopped
    1 can corn -- drained

    Place rice in bottom of crockpot. Pour water over rice. Mix canned soups and dry soup mix in a bowl, pour over top of rice. Add chopped veggies. Place chicken on top. Sprinkle with paprika. Cook on LOW for 3 to 4 hours.

    Beef Stew

    1 1/2 pounds stew meat
    1 packet Lipton beefy-onion soup mix
    1 1/2 teaspoons beef bouillon
    3 potatoes - (to 4), cubed
    4 carrots, sliced
    1 celery stalk, sliced
    1 can whole tomatoes, with their juice
    1 garlic clove, crushed
    Salt, to taste
    Freshly-ground black pepper, to taste
    2 tablespoons cornstarch, mixed with about
    1/4 cup cold water
    Put all ingredients in a slow cooker on LOW heat for 8 to 10 hours. Taste and adjust seasonings. Add 2 tablespoons of cornstarch mixed with water. Turn heat to HIGH and stir until thickened.

    All Day Delight
    2 pounds boneless chuck - (to 3 lbs), cut 1" cubes
    1/2 cup flour
    1/4 cup butter
    1 onion, sliced
    1 teaspoon salt
    1/8 teaspoon pepper
    1 garlic clove, minced
    2 cup beer
    1/4 cup flour

    Coat beef cubes with the 1/2 cup flour. Brown in melted butter. Drain off excess fat.

    In pot, combine browned meat with onion, salt, pepper, garlic and beer. Cover and cook on LOW 5 to 7 hours (all day) until meat is tender.

    Turn control to HIGH. Dissolve remaining 1/4 cup flour in small amount of water. Stir into meat mixture, cook on high 30 to 40 minutes. Serve with rice and a salad.

    This recipe yields 4 to 6 servings.

    Mrs. V, did you find any recipes from the Menu of the Month cookbook that would help? What kind of food do they like? What kinds of foods do you normally cook? Spagetti is always good, baked chicken, etc. Give me some ideas and I'll see what I can do.
